Pineapple Chinese Salad

1 can (20 oz) Dole Pineapple Tidbits in Juice
1 can (8 oz) water chestnuts, drained, sliced
3 cup cooked shredded chicken
1 cup chopped celery
1/2 cup shredded carrots
1/2 cup peanuts
1/3 cup sliced green onions
Sesame Soy Dressing (see below)
1 cup chow mein noodles

Drain pineapple. Combine with water chestnuts, chicken, celery, carrots, peanuts and green onions. Toss well with Sesame Soy Dressing, then chow mein noodles.
Makes 6 servings.

Sesame Soy Dressing
1/4 cup peanut oil
1/4 cup + 1 tbsp. white vinegar
3 tbsp. soy sauce
3 tbsp. brown sugar
2 tbsp. sesame seeds, toasted
1/4-1/2 tsp. crushed red pepper flakes (the extra red pepper makes a hotter dressing)

Combine all ingredients.
